Why Care?
-More food allergies have been diagnosed in recent years, than ever before all throughout history ...about 55% of America, to be exact
-Records of food allergies have increased 20% in just 10 years
-Today's generations are more than twice as likely to develop a food allergy when compared to their parents, which often are followed by other health complications (asthma, etc.)
-Peanut allergy (likely the most fatal food allergy) doubled its occurrence in children from 1997 to 2002
EXPAND YOUR KNOWLEDGE: Common Food Allergies
Gluten Intolerant:reaction to the gluten protein in grains such as wheat, barley, rye, and oats...not an immune reaction
Celiac Disease: a disease in which chronic failure to digest food is triggered by hypersensitivity of the small intestine to gluten.
Nut Allergy: very common allergy, hypersensitivity dietary substances from tree nuts causing an overreaction of the immune system, resulting in very severe symptoms
Lactose Intolerant: congenital disorder consisting of an inability to digest or fully metabolize milk and milk products; absence or deficiency of lactose results in an inability to hydrolyze lactose
Dietary Restrictions:
Vegan: lifestyle of not eating or using any animal products
Vegetarian: diet consisting of no meat
Pescatarian: diet consisting of no meat, except for fish
Lacto-Ovo Vegetarian: diet consisting of no meat, except for dairy and egg products
Fruitarian : diet that consists of only fruits, nuts and seeds- no animal products, vegetables or grains (for these things could all be considered 'alive' at one point)... a subset of veganism.
